Macé's HPP line of hummus and guacamole is designed to complement the range of pestos and fresh sauces. The recipes were developed using impeccable raw materials and extremely gentle processing: for hummus, the chickpeas are steamed and the characterising raw material is marinated or used fresh, while for guacamole, the avocados are processed raw and immediately mixed with the flavouring ingredients. The products are then stabilised using HPP (High Pressure Processing) technology, a non-thermal process that allows the best flavour to be obtained from vegetables and herbs while preserving their freshness and extending their shelf life. The possibilities for consumption are varied: hummus and guacamole are suitable for use in gourmet recipes or eaten as an appetiser or snack.
